63% Semillon, 25% Chardonnay, 12% Viognier. Semillon, for its part, generally relies on Chardonnay to add tropical flavours to the blend. Semillon adds a richness to Chardonnay’s bold frame, as well as nut and straw flavors, while the Viognier component adds rich, spicy and mouth watering notes of apricot, peach and honeysuckle. Heartier white wine dishes are the go-to here. The blend is relatively versatile and can cope with white meats and poultry such as roastchicken and thyme or hearty vegetarian dishes such as sautéed mushrooms on polenta.
